CONDENSED MILK: What it is and its origin
Condensed milk is a value-added dairy product made from the partial evaporation of water from pasteurized milk. In simpler terms it is a sweet dairy-based liquid that is produced by removing the moisture out of cow milk. It is most often found with sugar added, in the form of sweetened condensed milk, to the extent that the terms “condensed milk” and “sweetened condensed milk” are often used interchangeably today.
The origin of Condensed milk can be traced back to the Mid-nineteenth Century in the United States, where the need of finding means to preserve milk longer began. The first sweetened sealed condensed cow’s milk was produced by Gail Borden ( source: Wikipedia)
WHAT INGREDIENTS ARE IN THIS INSTANT HOMEMADE SWEETENED CONDENSED MILK?
There are basically just 4 items in this Instant Homemade Sweetened Condensed Milk.
- Milk Powder : Use full-fat milk for a rich taste and for a thick consistency.
- Unsalted softened Butter : Use a good brand. Have it in mind that the colour of your butter will have a great effect on the final look of your condensed milk.
- Sugar : I used granulated white sugar. You can use brown sugar if you want a nice caramel look and flavor. But don’t substitute it with any other form of sweetener as this is not the traditional method of making condensed milk.
- Hot water (boiling water) : Since we are leaving out the traditional method, then we have to use very hot water. It must be boiling.
- You can also decide to add Vanilla Extract, but I like keeping mine very simple.
TRADITIONAL CONDENSED MILK VS INSTANT CONDENSED MILK:
- The preparation method for Instant Condensed Milk recipe is made under 5 minutes, while the traditional recipe can take hours, ‘cos the milk needs to heated on low heat with continuos stirring till it’s reduced to ⅓ of its original volume.
- With a traditional recipe, you can use it for every recipe requesting for Condensed milk; while my Instant Condensed milk can be used for 80% of recipes requesting for condensed milk. I don’t use it for my homemade Ice-cream or frozen desserts. You can SIGN UP FOR MY STABLE ONLINE ICE-CREAM CLASS to see exactly how I make my traditional condensed milk.
- The long cooking hours for a traditional condensed milk, produces a caramel flavor with a distinct colour. You won’t get that in my Instant Homemade Condensed milk recipe.
- For the Traditional Condensed Milk recipe, you can do a dairy-free condensed milk, you can substitute sugar with any other sweetener of your choice, etc. While for my Instant homemade condensed milk, just stick to the recipe.
CONDENSED MILK SAME VERSUS EVAPORATED MILK:
Evaporated milk is simply made by simmering milk to reduce the water and it’s unsweetened. Condensed milk, on the other hand, is milk cooked with mega quantities of sugar resulting in a thick, pudding-like milk that’s actually sweeter than cake frosting.
The major difference that sets these two milk products apart is the sugar content; sweetened condensed is always sweetened, while evaporated milk is unsweetened. Can these milk products be substituted for one another in a given recipe? NO.
