Mix your brown sugar and cinnamon powder thoroughly. Set aside.
Also set aside your softened butter/margarine for spreading later.
Dough
In a large mixing bowl, combine all dry ingredients: flour, sugar, and salt. Stir well. Then add the yeast and stir again.
Create a well in the center of your flour mix. Add eggs and softened butter. Mix with your hands or a spoon to form a crumbly, breadcrumb-like texture.
Make another well in the center and begin adding milk little by little. Mix until you form a slightly sticky but manageable dough.
Transfer the dough onto your clean work surface. Knead for 4 minutes. You can use a slamming method (shown in the video) or a dough mixer for commercial quantities.
Roll the dough into a rectangle measuring about 18 by 15 inches.
Spread the softened butter evenly over the surface of the rolled dough.
Sprinkle your cinnamon-brown sugar mix generously across the top. Using an offset spatula or crank knife, press the filling gently into the dough for full absorption (watch this technique in the video).
From the long edge, roll the dough into a snug log (not too loose). Slice into 12 equal portions using dental floss or a sharp knife.
Place each roll on your prepared tray, leaving space between them for expansion.
Cover and proof for 45 minutes to 1 hour until the rolls become visibly puffy.
Bake in a preheated oven at 180°C (350°F) for 20–25 minutes until golden brown.
Let the rolls cool for 2–3 minutes, then remove them from the tray. Glaze with any topping of your choice—cream cheese, vanilla glaze, or just a light sugar syrup.
